September 26th is National Pancake Day. Celebrate with these delicious and nutritious pancake recipes.
High Protein Pancakes:
INGREDIENTS:
– 1 cup rolled oats
– 1 egg
– 1 tbsp. chia seeds
– 1 scoop of your favourite chocolate protein powder
– 1 banana
– 2 cups almond milk
– 1 tsp cacao powder
DIRECTIONS: In a blender mix all ingredients. Heat 1 tbsp of coconut oil over medium heat on a griddle or frying pan. Pour or scoop the batter onto the pan. Let cook 2-3 minutes on each side then flip. Make sure the pancakes are fully cooked and enjoy with your favourite toppings.
Strawberry Cheesecake Pancakes:
INGREDIENTS:
– 1 cup oat flour
– ½ tsp baking powder
– ½ tsp baking soda
– ¼ tsp salt
– 2 eggs
– ½ cup & 3 tbsp milk of your choice
– 2 tsp grapeseed oil
– ½ cup cream cheese
– ½ cup strawberries
DIRECTIONS: Combine dry ingredients, and in a separate bowl, gently beat eggs and stir in milk. Add wet ingredients to dry ingredients until smooth consistency of pancake batter. Let batter rest for 10 minutes. In griddle or frying pan heat oil over medium heat. Scoop batter onto pan and let cook for about 2 minutes on each side, or until golden brown. Stir cream cheese and orange zest together. Dollop cream cheese mixture on top of the pancake and sprinkle with strawberries. Garnish with fresh mint, powdered sugar or strawberry infused maple syrup.
Easy as 1, 2, 3:
INGREDIENTS:
– 1 ½ bananas, ripe to overripe
– 2 eggs
– 1/8 tsp baking powder
DIRECTIONS: In a mixing bowl, add egg and baking powder and whisk to combine. In another bowl lightly mash the banana so that there are no chunks. Combine mashed bananas with egg and baking powder mixture. Cook on a griddle or frying pan over medium low heat for about 1 minute. Serve immediately while hot with your choice of maple syrup, butter, fruit preserves or fresh fruit.
